Scrambled Eggs and Toast
1 egg
butter
salt
bread
1. Melt 1 tablespoon butter in a frying pan over medium heat.
2. Break an egg into the pan. Stir it with a fork until the white and the yellow are mixed.
3. Watch the egg as it solidifies. Don't stir it continuously but use
a spoon to scrape it away from the bottom and edges of the pan.
When all the runny parts are gone, the egg is done. Don't overcook.
4. Serve with buttered toast.
Superkids Pancakes
2 cups (15 ounces) ricotta cheese
6 eggs
3 tablespoons cooking oil
1/3 teaspoon salt
1/2 cup flour
1/2 cup powdered milk
2 tablespoons butter
1 tablespoon cooking oil
Mix the first six ingredients in a large bowl and stir well.
Melt butter with oil in a large frying pan over medium-high heat.
Using a quarter-cup measure, ladle the batter, one pancake at a time,
into the frying pan. When brown on the bottom, turn with a spatula
so the other side can brown. Serve with butter, syrup, or jam. Serves 6.
