2 cups peeled and shredded potatoes
1 tablespoon onion, grated
3 eggs, lightly beaten
1 1/2 teaspoons salt
2 tablespoons flour
1/2 cup vegetable oil
Drain as much liquid as possible from the potatoes, squeezing them between paper towels.
Mix potatoes, onions, eggs, salt and flour in a bowl.
In a heavy skillet, heat oil over medium-high heat. Drop large spoonfuls of the potato mixture into the oil, pressing down to form patties (1/2" thick or less).
Brown on each side then drain on paper towels.
Serve warm, topped with applesauce.
